Afternoon tea recipes for the Wimbledon finals

The Wimbledon finals are one of the highlights of summer.

The green courts, pristine whites and punnets of strawberries are some of the quintessential sights of the British summertime.

However, if you didn’t bag tickets for this weekend, or are still disappointed by Andy Murray’s early exit, there’s no need to despair – we’ve got some recipes for an elegant, healthier afternoon tea that will keep your spirits high even if you’re watching on TV.

 

These teatime treats will be great to feast on as the play heats up and at least you can console yourself that you won’t have to queue up for snacks… unlike those watching the action from Centre Court itself!

Why not try:

Dainty cucumber finger sandwiches:

Slice a cucumber into thin rounds, then layer on rye or wholemeal bread, or a wholegrain crispbread, along with a thin spread of low-fat cream cheese

Zingy prawn open sandwiches:

Chop up cooked prawns, before piling on top of rye or wholemeal bread that has a thin spread of reduced-fat mayonnaise, before squeezing lemon juice on top and scattering with fresh dill and a twist of black pepper.

Eton Mess:

Stir two heaped tablespoons of fat-free Greek yoghurt in a bowl until smooth, before crumbling over a meringue nest, and topping with fresh strawberries and mint.

Frozen berry yoghurt:

Whizz together three heaped tablespoons of low-fat natural yoghurt, frozen berries of your choice, a few sprigs of mints and a tiny drizzle of honey or a small banana

Fruity kebabs:

Skewer seasonal fruit – strawberries, raspberries, and cherries would all work – then drizzle a small amount of melted dark chocolate over them

Fizzy, fruity cooler:

Pour diet lemonade into a glass and serve with slices of strawberry, orange, cucumber and mint, with some home made ice cubes that have berries frozen inside them
